Behind the scenes... the amount of food that is prepared in the Avanti kitchens is astounding! About 500 gallons of sauces, 11,000 breadsticks, 4,000 meatballs, and nearly 1/2 ton of Italian sausages, in just one month! That's a lot of stirring, kneading, rolling, and dicing! Of course, the main staple of a good Italian meal is the pasta. Pasta making is an ongoing job and requires hundreds of dozens of eggs and many barrels of special flours. In an average month, about one and a half tons of pasta will be served! A ton and a half of pasta is hard to image. If you sat down to eat a regular serving of 8 ounces every day, it would take 11 years to finish what Avanti's makes in a single month!
